Vegan meatballs with oven-baked potatoes and oven-baked broccoli

Ingredients:

  • 500 g vegan meatballs
  • 500 g baby potatoes
  • 300 g broccoli
  • 4 tbsp mustard
  • 1/2 cup orange juice
  • 2 tbsp lemon juice
  • 4 tbsp olive oil
  • 2 tbsp butter
  • A little oregano
  • A little thyme

PREPARATION

We wash the baby potatoes and make 6 holes with a fork, meaning we prick them twice. We cut the broccoli and squeeze the lemons and the orange.

EXECUTION

We place the potatoes in the oven after adding olive oil, mustard, lemon juice, orange juice, oregano, and thyme, and bake them at 220°C for 35 minutes (until they take on color). Just before removing them, we place the chopped broccoli in the oven, after drizzling it with a little olive oil and salt. Then, we take a frying pan and fry the meatballs. When they're almost ready, we add the 2 tbsp of butter and, using a teaspoon, drizzle the melted butter over the meatballs. This ensures that the meatballs cook evenly all over. Finally, we serve the potatoes, broccoli, and meatballs and enjoy.
