Finely chop the vegetables (celery, carrot, onion) and place all the sauces in a bowl.
In a pot, add oil, onion, celery, carrots, and once they "wilt," add the red wine and let it evaporate completely. Then add the veggie mince and break it up with the spoon into small pieces. Next, add the sauces, stir, and let it simmer for 20 minutes on low heat. Meanwhile, boil the pasta. Finally, add a tablespoon of molasses and check if salt is needed. Add a bit of soy milk, serve, and sprinkle with a little parsley on top.
